I hope everyone had a Happy Valentine’s Day. I know I did. We usually spend the day putting something special on the grill, but this year, we decided to go to Chef Pam’s Kitchen and learn to make a special meal ourselves. The menu included an appetizer of Bay Scallops, Coconut Shrimp on Mango Salsa, Scallop stuffed Lobster with corn and coleslaw, and Chocolate Molten Lava Cake. It was delicious!

This is such a welcoming venue where you can safely learn to cook special meals at home. Chef Chad was the featured chef tonight and was very gracious about sharing his knowledge. Chef Pam and the rest of the staff kept us all on track and moving forward. Believe it or not, we all ended up with our own stuffed lobsters that we created ourselves.

Every time I get out of my safe space, I learn something special. Besides learning how to cook an East Coast meal, I was fortunate to be seated next to a lady that came to the Valentine Dinner on her own. She told me that she is her own Valentine and deserves to treat herself to a special meal. Yes. Yes, you do.

What a great attitude and how very right you are. If you don’t love yourself, it’s pretty hard to love anyone else. I heard Monica’s laughter throughout the evening as we were paired with various people during the dinner prep. What an inspiration. We enjoyed our time with Monica and with Chef Pam and her staff. We will be back. I hope you enjoy my pictures.
