Happy Thanksgiving!

I don’t know about you, but I love Thanksgiving. I love being with my family and friends, and this year we had the extra joy of meeting more family and hosting them for dinner. Part of my extended family is from Venezuela and currently live in the south. They traveled quite a distance to be with us and I can honestly say that I can’t wait to see them again.

To me, Thanksgiving is about being grateful. I am very grateful for family and good friends, for health and happiness, for a table full of food to share and reinvent into leftover meals for later. I’m grateful for a warm house and a warm life partner to snuggle up with on a cold night.

This year, I also reflect on those we’ve lost and I feel sorrow for the families who suffered losses or injuries in the Waukesha Christmas parade. Yesterday, we participated in a fund raiser for the Waukesha families impacted and were able to enjoy the Christmas lights at the same time.

Today, I remember how my parents and grandparents never let food go to waste. I was able to use my leftover turkey and make food to freeze and last for the next month. How do turkey and stuffing casserole, turkey and vegetable soup, vegetable salad and turkey tortilla, turkey tetrazzini, turkey and spinach lasagna, shells stuffed with cheese and turkey, and herbed turkey stroganoff sound? Pre-made dinners means more time to play later. Can’t wait!
